Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  3. Beat in the egg and vanilla extract until everything is well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until you form a soft dough.
  6. (Optional) Chill the dough in the refrigerator for 30 minutes for a thicker, chewier cookie.
  7. Roll the dough into 1-tablespoon balls and place them on the prepared baking sheets.
  8. Press a fork into each ball to create a criss-cross pattern on top.
  9. Bake for 9–11 minutes, or until the edges are golden brown.
  10. Let the cookies cool on the baking sheet for 2 minutes before transferring them to a wire rack.

Notes

Use room temperature butter for easier mixing. For a softer cookie, bake for less time. You can also experiment by adding chocolate chips or nuts.
