- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 and 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Beat in the egg and vanilla extract until everything is well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture until you form a soft dough.
- (Optional) Chill the dough in the refrigerator for 30 minutes for a thicker, chewier cookie.
- Roll the dough into 1-tablespoon balls and place them on the prepared baking sheets.
- Press a fork into each ball to create a criss-cross pattern on top.
- Bake for 9–11 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for 2 minutes before transferring them to a wire rack.
Notes
Use room temperature butter for easier mixing. For a softer cookie, bake for less time. You can also experiment by adding chocolate chips or nuts.
