- 1 loaf of crusty Italian bread
- 1 cup green olives, pitted and chopped
- 1 cup black olives, pitted and chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- 4 oz capicola
- 4 oz salami
- 4 oz mortadella
- 4 oz provolone cheese
- 4 oz mozzarella cheese
Instructions
- In a bowl, combine chopped green and black olives, garlic, oregano, and red pepper flakes. Mix well and let it marinate for at least 30 minutes.
- Slice the Italian bread in half horizontally.
- Spread the olive salad evenly over the bottom half of the bread.
- Layer the cured meats and cheeses on top of the olive salad.
- Close the sandwich with the top half of the bread and press down gently.
- Wrap the sandwich tightly with plastic wrap and place a heavy weight on top to help meld the flavors, letting it sit for 1 hour or longer.
- Slice into wedges and serve, optionally with a side of balsamic vinaigrette or aioli.
