Description

A savory sandwich filled with layers of cured meats, cheeses, and a zesty olive salad, perfect for picnics and gatherings.


Ingredients

  • 1 loaf of crusty Italian bread
  • 1 cup green olives, pitted and chopped
  • 1 cup black olives, pitted and chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 4 oz capicola
  • 4 oz salami
  • 4 oz mortadella
  • 4 oz provolone cheese
  • 4 oz mozzarella cheese

Instructions

  1. In a bowl, combine chopped green and black olives, garlic, oregano, and red pepper flakes. Mix well and let it marinate for at least 30 minutes.
  2. Slice the Italian bread in half horizontally.
  3. Spread the olive salad evenly over the bottom half of the bread.
  4. Layer the cured meats and cheeses on top of the olive salad.
  5. Close the sandwich with the top half of the bread and press down gently.
  6. Wrap the sandwich tightly with plastic wrap and place a heavy weight on top to help meld the flavors, letting it sit for 1 hour or longer.
  7. Slice into wedges and serve, optionally with a side of balsamic vinaigrette or aioli.
