Description

A cozy and comforting bowl of French onion soup made with slow-cooked sweet onions and topped with melted cheese.


Ingredients

  • 4 large sweet onions, thinly sliced
  • 4 cups low-sodium beef broth
  • 1 baguette, sliced
  • 2 cups shredded cheese (Gruyère or Swiss)
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the sliced onions, and cook slowly, stirring occasionally, for about 30 minutes until they are caramelized and golden brown.
  2. Add the beef broth to the pot and bring to a simmer. Let it cook for another 15 minutes.
  3. Preheat the broiler. Ladle the soup into oven-safe bowls and top each with a slice of baguette and a generous amount of cheese.
  4. Place the bowls under the broiler for 3-5 minutes until the cheese is bubbly and golden brown. Serve hot.

Notes

For a richer flavor, use low-sodium beef broth. To make it gluten-free, substitute with gluten-free bread. Dairy-free options can be achieved with non-dairy cheese or nutritional yeast.
