- 4 large sweet onions, thinly sliced
- 4 cups low-sodium beef broth
- 1 baguette, sliced
- 2 cups shredded cheese (Gruyère or Swiss)
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the sliced onions, and cook slowly, stirring occasionally, for about 30 minutes until they are caramelized and golden brown.
- Add the beef broth to the pot and bring to a simmer. Let it cook for another 15 minutes.
- Preheat the broiler. Ladle the soup into oven-safe bowls and top each with a slice of baguette and a generous amount of cheese.
- Place the bowls under the broiler for 3-5 minutes until the cheese is bubbly and golden brown. Serve hot.
Notes
For a richer flavor, use low-sodium beef broth. To make it gluten-free, substitute with gluten-free bread. Dairy-free options can be achieved with non-dairy cheese or nutritional yeast.
