Description

A warm and comforting Classic Chicken Noodle Soup made with tender chicken, fresh vegetables, and egg noodles, perfect for chilly days.


Ingredients

  • 1 whole chicken (or bone-in pieces)
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 8 cups low-sodium chicken broth
  • 2 cups egg noodles
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. In a large stockpot, sauté the onions, carrots, and celery over medium heat until softened.
  2. Add the chicken and chicken broth, bringing it to a boil.
  3. Reduce heat and simmer until the chicken is cooked through and tender.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Add the egg noodles and cook until al dente.
  6. Stir in the fresh thyme and parsley, and season with salt and pepper to taste.
