A warm and comforting Classic Chicken Noodle Soup made with tender chicken, fresh vegetables, and egg noodles, perfect for chilly days.
Ingredients

- 1 whole chicken (or bone-in pieces)
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 8 cups low-sodium chicken broth
- 2 cups egg noodles
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- In a large stockpot, sauté the onions, carrots, and celery over medium heat until softened.
- Add the chicken and chicken broth, bringing it to a boil.
- Reduce heat and simmer until the chicken is cooked through and tender.
- Remove the chicken, shred it, and return it to the pot.
- Add the egg noodles and cook until al dente.
- Stir in the fresh thyme and parsley, and season with salt and pepper to taste.
- Serve steaming hot, garnished with additional parsley if desired.
Notes
For a richer flavor, consider using rotisserie chicken. Adjust salt based on the sodium content of your broth.
