Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking powder, cinnamon, granulated sugar, and brown sugar.
- In another bowl, beat the softened butter until creamy. Gradually mix in the dry ingredients until well combined.
- Add the egg and vanilla extract; mix until fully incorporated.
- Scoop tablespoon-sized portions onto prepared baking sheets, spacing them about two inches apart.
- Bake for 10-12 minutes until the edges are lightly golden. Allow cooling slightly before enjoying.
Notes
For an extra treat, drizzle some icing on top after they cool. They can be stored in an airtight container for about a week or frozen for up to three months.
