Description

Delightful flavors of classic cinnamon rolls in a bite-sized cookie, perfect for sharing or indulging.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1 tbsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar (packed)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, cinnamon, and salt.
  3. In another bowl, cream softened butter and brown sugar until light and fluffy. Add egg and vanilla; mix well.
  4. Gradually combine dry ingredients into the wet mixture until just mixed.
  5. Scoop tablespoon-sized portions onto the baking sheet, spacing them two inches apart.
  6. Bake for about 10 minutes or until edges are golden brown but centers remain soft.
  7. Cool slightly before serving.

Notes

For extra sweetness, add a simple icing drizzle or a sprinkle of powdered sugar on top.
