Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, granulated sugar, baking powder, cinnamon, and salt.
- In another bowl, cream softened butter and brown sugar until light and fluffy. Add egg and vanilla; mix well.
- Gradually combine dry ingredients into the wet mixture until just mixed.
- Scoop tablespoon-sized portions onto the baking sheet, spacing them two inches apart.
- Bake for about 10 minutes or until edges are golden brown but centers remain soft.
- Cool slightly before serving.
Notes
For extra sweetness, add a simple icing drizzle or a sprinkle of powdered sugar on top.
