Instructions
- Cream the butter and sugars together until light and fluffy.
- Add the egg and vanilla, mixing until combined.
- Combine the dry ingredients in a separate bowl and gradually mix into the wet ingredients.
- Chill the dough for 30 minutes to prevent spreading.
- Shape the dough into rings on a parchment-lined baking sheet.
- Bake at 350°F (175°C) for 10–12 minutes until edges are set.
- Cool completely before piping in the cheesecake filling.
- Roll the cookie rims in cinnamon sugar for finishing touch.
