- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon pure mint extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup powdered sugar (for rolling)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the flour, cocoa powder, baking powder, and salt.
- In another bowl, mix the sugar, oil, eggs, and mint extract until well combined.
- Gradually add the dry ingredients to the wet ingredients to form a thick, sticky dough.
- Chill the dough in the refrigerator for about 30 minutes.
- Roll the dough into balls and coat them in powdered sugar.
- Place them on a baking sheet lined with parchment paper and bake for 10-12 minutes, until the edges are set and the tops have cracked.
- Let cool slightly before serving.

Store in an airtight container at room temperature for up to 4 days or freeze for up to 3 months. Thaw at room temperature before serving.
