- 1 cup (226 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 1/2 cups (312 g) all-purpose flour
- 1/2 cup (50 g) unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
Instructions
- Cream together the butter and sugar until light.
- Add the egg and vanilla extract and mix until combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture and mix until just combined.
- Chill the dough for at least 1 hour to firm the butter.
- Roll the dough between parchment paper to 1/8–1/4 inch thick.
- Cut out shapes and place on a baking sheet; chill cut cookies for 10–15 minutes.
- Bake in a preheated oven at 350°F (175°C) for 8–10 minutes until edges are set.
- Cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
Notes
Use Dutch-process cocoa for deeper color and flavor. The dough can be frozen for up to 3 months.
