  • 1/2 cup semi-sweet chocolate chips
  • Optional: 1/4 cup chopped nuts (walnuts or pecans) or chocolate chunks
  • 1/2 cup unsalted butter
  • 1/3 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: 1/4 cup chopped nuts or different chocolate chips (white, dark, peanut butter)

Instructions

  1. Cream together the room temperature butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add vanilla extract and egg, mixing until combined.
  3. Gradually add flour, baking powder, and salt, then fold in chocolate chips and optional mix-ins.
  4. Chill the cookie dough for 30 minutes.
  5. In another bowl, melt butter and cocoa powder until smooth.
  6. Whisk together sugar and eggs until thick, then add the melted cocoa mixture.
  7. Incorporate flour, baking powder, and salt until blended.
  8. Grease a mini muffin tin or line it with paper liners.
  9. Spoon brownie batter into each cup, press a cookie dough ball into the center, and cover with more brownie batter.
  10. Bake at 350°F (175°C) for 15-18 minutes until edges are set but centers remain gooey.
  11. Cool in the pan before removing or chill before serving.
