Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together melted butter, eggs, milk, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Prepare the chocolate filling and chill it until spreadable.
- Layer spoonfuls of batter and chocolate filling in muffin tins, swirling gently with a skewer.
- Make the espresso crumble topping and sprinkle over the muffins.
- Bake for 18-22 minutes or until a toothpick comes out with a few moist crumbs.
- Let cool slightly before serving; enjoy warm or at room temperature.
