Description

Delicious and easy chicken skewers with a mix of spicy and sweet flavors, perfect for barbecues or weeknight dinners.


Ingredients

  • 1.5 lbs chicken breast or thighs, cut into bite-sized pieces
  • 23 chipotle peppers in adobo
  • 3 tablespoons honey
  • 2 garlic cloves, minced
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon soy sauce (optional)

Instructions

  1. In a blender or bowl, combine chipotle peppers in adobo, honey, garlic, lime juice, olive oil, salt, pepper, and optional soy sauce. Blend or whisk until smooth and well combined to create a flavorful marinade base.
  2. Toss the bite-sized chicken pieces into the marinade. Cover and refrigerate for at least 30 minutes, ideally 2 hours, to allow the flavors to deeply penetrate the meat.
  3. Thread the marinated chicken pieces onto soaked wooden or metal skewers, leaving some space between pieces for even cooking.
  4. Preheat your grill to medium-high heat. Cook the skewers for about 4-5 minutes per side until the chicken is cooked through and caramelized at the edges.
  5. Remove the skewers from the grill and let them rest briefly to lock in juices. Garnish as desired and serve with your favorite sides.

Notes

Soak wooden skewers for at least 30 minutes before using to prevent burning. Customize with vegetables such as bell peppers or onions for added flavor.
