Ingredients

  • 2 tablespoons lime juice

Instructions

  1. Shuck the fresh corn and cut the kernels off the cob.
  2. In a hot skillet or on a grill, briefly cook the corn until slightly charred.
  3. In a bowl, combine lime juice, lime zest, chili powder, olive oil, and salt.
  4. Add the charred corn to the bowl and toss to combine.
  5. Garnish with fresh cilantro if desired and serve immediately.
