- 4 ears of fresh corn

Instructions
- Shuck the fresh corn and cut the kernels off the cob.
- In a hot skillet or on a grill, briefly cook the corn until slightly charred.
- In a bowl, combine lime juice, lime zest, chili powder, olive oil, and salt.
- Add the charred corn to the bowl and toss to combine.
- Garnish with fresh cilantro if desired and serve immediately.
Notes
For a smoky flavor, grill the corn instead of cooking on the stove. Adjust chili levels based on your spice preference.
