Description

A quick and easy dish combining healthy ingredients like chicken and zucchini, perfect for busy weeknights.


Ingredients

  • 1 lb boneless chicken breasts or thighs, diced
  • 2 medium zucchinis, sliced into half-moons or rounds
  • 23 cloves garlic, minced
  • 1 cup cherry tomatoes (optional)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Slice the zucchini into half-moons or rounds. Dice the chicken into bite-sized pieces. Mince the garlic.
  2. Heat olive oil in a skillet over medium-high heat. Add the diced chicken, season with salt, pepper, and Italian seasoning. Cook for 5-7 minutes until golden brown and fully cooked. Remove chicken and set aside.
  3. In the same skillet, add more olive oil if needed. Sauté zucchini and minced garlic for 3-4 minutes until tender.
  4. Return the chicken to the skillet and mix with the zucchini and garlic. If using cherry tomatoes, add them now and cook for an additional 2 minutes. Finish with a sprinkle of Parmesan cheese if desired.

Notes

Adjust seasoning to taste. Consider adding vegetables like bell peppers or corn for added crunch.
