A hearty Italian dish combining juicy chicken thighs and savory sausage, perfect for family dinners and gatherings.

  • Total Time: 55 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 2 Italian sausages (mild or spicy)
  • 1 tbsp olive oil (for searing)
  • Salt and pepper, to taste
  • 1 medium onion, thinly sliced
  • 1 bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken thighs with salt and pepper, then sear them skin-side down for 5-7 minutes until golden. Flip and cook for another 4-5 minutes. Remove and set aside.
  3. In the same skillet, add sausages and cook, turning occasionally, until browned on all sides (about 8-10 minutes). Remove and set aside.
  4. Add sliced onion and bell pepper to the skillet, cooking for 5 minutes until softened. Add garlic and cook for another 1-2 minutes.
  5. Pour in chicken broth and lemon juice. Stir in oregano and red pepper flakes. Let simmer for 2-3 minutes to meld the flavors.
  6. Return the chicken and sausage to the skillet. Cover and simmer for 25-30 minutes until the chicken is cooked through (165°F internal temperature).
  7. Garnish with fresh parsley. Serve with pasta, rice, or crusty bread.

Notes

For extra flavor, marinate the chicken thighs in lemon juice and herbs a few hours before cooking. Adjust spiciness level by choosing different sausages or adjusting red pepper flakes.
