Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tablespoons capers, rinsed
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • Pasta, potatoes, or crusty bread for serving

Instructions

  1. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, lemon juice, lemon zest, capers, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Heat olive oil in a skillet over medium heat. Add meatballs and cook until golden brown on all sides, about 6-8 minutes.
  4. Remove meatballs from the skillet and set aside.
  5. In the same skillet, add chicken broth, scraping up any browned bits from the bottom.
  6. Return the meatballs to the skillet and simmer for about 10 minutes until cooked through.
  7. Serve over pasta, with potatoes, or alongside crusty bread.

Notes

Adjust the lemon juice to your taste and feel free to use ground turkey or beef instead of chicken.
