- 1 ½ pounds Chicken Breasts, thinly sliced against the grain
- 1 Green Bell Pepper, sliced
- 1 Red Bell Pepper, sliced
- 1 White Onion, sliced
- 1 tsp Italian Seasoning
- ½ tsp Salt
- ½ tsp Pepper
- 8 Slices Provolone Cheese
- 4 Hoagie Rolls
- 1 Tbsp Avocado Oil
- 1 Tbsp Butter
Instructions
- Preheat a large skillet or griddle over medium-high heat (approximately 400 degrees F).
- Add the oil and butter to the middle of the griddle or skillet and allow it to melt.
- Add the peppers and onions; sauté for 3-5 minutes until cooked to preference and then remove to a plate.
- Add the chicken, season with Italian seasoning, salt, and pepper, and cook for 3-5 minutes before flipping and chopping into smaller pieces. Cook until done (2-3 more minutes).
- Add the sautéed peppers and onions back to the pan and top with sliced cheese. Cover and allow to melt.
- Toast the hoagie rolls.
- Scoop the cheesy chicken and veggie mixture onto the toasted hoagie rolls and serve immediately.
Notes
Slice the chicken against the grain for tender bites. Adjust vegetable amounts to your liking and consider adding mushrooms or spinach for extra flavor.
