Description

Ingredients

  • 2 cups cooked day-old rice
  • 1 pound chicken breast, diced
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced

Instructions

  1. Heat oil in a large skillet or wok over high heat. Add the diced chicken and sauté until golden and cooked through.
  2. Add the mixed vegetables to the pan and stir-fry for 2-3 minutes until they are vibrant and tender-crisp.
  3. Push the chicken and vegetables to the side of the pan, pour in the beaten eggs and scramble until fully cooked.
  4. Add the day-old rice to the pan, breaking up any clumps, and stir to combine all the ingredients.
  5. Pour the soy sauce over the rice, stirring continuously to incorporate and heat through. Ensure everything is evenly coated.
  6. Remove from heat, garnish with sliced green onions, and serve hot.

Notes

Use day-old rice for best texture. Frozen vegetables can be substituted for convenience.
