- 2 cups cooked day-old rice
- 1 pound chicken breast, diced
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, sliced
Instructions
- Heat oil in a large skillet or wok over high heat. Add the diced chicken and sauté until golden and cooked through.
- Add the mixed vegetables to the pan and stir-fry for 2-3 minutes until they are vibrant and tender-crisp.
- Push the chicken and vegetables to the side of the pan, pour in the beaten eggs and scramble until fully cooked.
- Add the day-old rice to the pan, breaking up any clumps, and stir to combine all the ingredients.
- Pour the soy sauce over the rice, stirring continuously to incorporate and heat through. Ensure everything is evenly coated.
- Remove from heat, garnish with sliced green onions, and serve hot.
Notes
Use day-old rice for best texture. Frozen vegetables can be substituted for convenience.
