- 1 lb chicken breast, sliced
- 2 bell peppers, sliced
- 1 onion, sliced
- 6 corn or flour tortillas
- 2 cups shredded cheese (Monterey Jack or Chihuahua)
- 1 cup salsa
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté chicken until cooked through.
- Add sliced bell peppers and onion to the skillet and cook until tender.
- In a baking dish, layer the cooked chicken and veggies, tortillas, cheese, and salsa.
- Repeat the layers until all ingredients are used, finishing with cheese on top.
- Bake in the preheated oven for 30 minutes or until the cheese is bubbly and golden.
Notes
For a gluten-free version, use corn tortillas. For a dairy-free option, use dairy-free cheese or omit cheese and add avocado.
