Description

A hearty, comforting Tex-Mex dish combining tender chicken, vibrant veggies, and melty cheese in a one-pan casserole.


Ingredients

  • 1 lb chicken breast, sliced
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 6 corn or flour tortillas
  • 2 cups shredded cheese (Monterey Jack or Chihuahua)
  • 1 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté chicken until cooked through.
  3. Add sliced bell peppers and onion to the skillet and cook until tender.
  4. In a baking dish, layer the cooked chicken and veggies, tortillas, cheese, and salsa.
  5. Repeat the layers until all ingredients are used, finishing with cheese on top.
  6. Bake in the preheated oven for 30 minutes or until the cheese is bubbly and golden.

Notes

For a gluten-free version, use corn tortillas. For a dairy-free option, use dairy-free cheese or omit cheese and add avocado.
