- 1 lb boneless skinless chicken breasts (or 2 cups shredded rotisserie chicken)
- 2 tbsp butter
- 2 minced garlic cloves
- 1 cup heavy cream
- 1 cup finely grated Parmesan cheese
- Salt and pepper to taste
- 1 12–14 inch baguette
- Olive oil for brushing
- Additional Parmesan cheese for topping
- Fresh parsley, chopped for garnish
Instructions
- Season and cook chicken in a skillet over medium-high heat for 6–8 minutes per side until the internal temperature reaches 165°F, then slice or shred.
- Melt butter in a saucepan, add minced garlic and cook for 30 seconds.
- Stir in heavy cream and simmer gently for 3–4 minutes.
- Whisk in grated Parmesan cheese until smooth; season with salt and pepper.
- Halve the baguette and brush each half with olive oil and garlic butter.
- Bake at 400°F for 6–8 minutes to firm the crumb.
- Spread the Alfredo sauce and chicken over the toasted bread, sprinkle with additional Parmesan and parsley.
- Broil for 1–2 minutes to brown the top.
Notes
Use leftover rotisserie chicken for a time-saving option. Toasting the bread before adding sauce helps to prevent sogginess.
