- 1/2 cup Chia Seeds
- 1 cup Water
- 1 cup Rolled Oats
- 1/2 cup Dried Apricots (Chopped)
- 2 cups Almond Milk
- 1/2 cup Dairy-free Yogurt
- 1 cup Fresh Apricots
- 2 tablespoons Almond Butter
- 1/4 cup Chopped Nuts
Instructions
- Soak the chia seeds in 1 cup of water for at least 30 minutes or overnight.
- In a pot, combine the soaked chia seeds, rolled oats, chopped dried apricots, and almond milk.
- Cook over medium heat, stirring occasionally, until the mix thickens and the oats are soft (about 10-15 minutes).
- Remove from heat and stir in the dairy-free yogurt.
- Serve topped with fresh apricots, almond butter, and chopped nuts.
Notes
Store leftover porridge in an airtight container in the refrigerator for up to three days. Reheat with almond milk if too thick.
