Ingredients

- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 1/4 cup molasses
- 2 1/4 cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup sugar (for rolling)
Instructions
- Cream together the butter and sugar until light and fluffy.
- Add molasses and spices, and mix until combined.
- Gradually mix in the flour, baking soda, and salt.
- Roll the dough into balls and then roll in sugar.
- Place on a baking sheet and bake at 350°F (175°C) for 10-12 minutes.
- Remove from the oven and allow to cool on the baking sheet.
Notes
For chewier cookies, avoid overbaking and consider chilling dough if too soft.
