Description

Delicious mini cheesecake bites with a graham cracker crust topped with cherry pie filling, perfect for parties and easy to make ahead.


Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 8 oz cream cheese, room temperature
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 2 tbsp sour cream
  • Cherry pie filling, for topping

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Press the graham cracker crumb mixture into lined mini muffin cups.
  3. In a mixing bowl, beat the cream cheese, sugar, egg, vanilla, and sour cream until smooth.
  4. Spoon or pipe the filling over the crusts, filling each about 3/4 full.
  5. Bake for 18-22 minutes until slightly set in the center.
  6. Cool completely and then chill for 2 hours.
  7. Top with cherry pie filling just before serving.

Notes

For best results, avoid overmixing the filling to prevent cracks. Chill overnight for easier slicing.
