Description

Cheesy Taco Stuffed is a quick and delicious meal that brings together the flavors of tacos and gooey cheese, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 packet taco seasoning
  • 1/2 cup water (or beef broth)
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 tablespoon butter, melted (for brushing)
  • Optional toppings: sour cream, salsa, chopped cilantro, jalapeños

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until it becomes soft.
  2. Add the ground beef (or turkey) to the skillet. Cook until browned, breaking it apart with a spatula.
  3. Stir in the taco seasoning and water (or broth). Cook for a few more minutes until the mixture thickens.
  4. Preheat your oven to 375°F (190°C).
  5. Take one tortilla and place a portion of the beef mixture in the center. Top with shredded cheese. Fold the sides over and roll it up tightly. Repeat with the other tortillas.
  6. Place the stuffed tortillas seam-side down in a baking dish. Brush the tops with melted butter.
  7. Bake for about 15-20 minutes, or until the tortillas are golden brown and the cheese is melted.
  8. Remove from the oven and let them cool slightly before serving.

Notes

You can use pepper jack or Monterey Jack cheese for extra spice. For a vegetarian version, use black beans or lentils.
