Cheesy Taco Stuffed is a quick and delicious meal that brings together the flavors of tacos and gooey cheese, perfect for busy weeknights.

- 1 lb ground beef (or ground turkey)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 packet taco seasoning
- 1/2 cup water (or beef broth)
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 tablespoon butter, melted (for brushing)
- Optional toppings: sour cream, salsa, chopped cilantro, jalapeños
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until it becomes soft.
- Add the ground beef (or turkey) to the skillet. Cook until browned, breaking it apart with a spatula.
- Stir in the taco seasoning and water (or broth). Cook for a few more minutes until the mixture thickens.
- Preheat your oven to 375°F (190°C).
- Take one tortilla and place a portion of the beef mixture in the center. Top with shredded cheese. Fold the sides over and roll it up tightly. Repeat with the other tortillas.
- Place the stuffed tortillas seam-side down in a baking dish. Brush the tops with melted butter.
- Bake for about 15-20 minutes, or until the tortillas are golden brown and the cheese is melted.
- Remove from the oven and let them cool slightly before serving.
Notes
You can use pepper jack or Monterey Jack cheese for extra spice. For a vegetarian version, use black beans or lentils.
