  • 1 lb ground beef
  • 1 medium onion, chopped
  • 34 medium potatoes, peeled and sliced thinly
  • 2 cups shredded cheddar cheese (or a blend of cheeses)
  • 1 can cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for sautéing)
  • Fresh parsley or chives (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes until softened. Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked. Drain any excess fat. Season with garlic powder, onion powder, salt, and pepper. Stir to combine.
  2. Grease a 9×13-inch baking dish with cooking spray or butter. Arrange a layer of sliced potatoes on the bottom of the dish. You may overlap them slightly to create a solid layer. Spread half of the cooked beef mixture over the potatoes. Repeat with another layer of potatoes and the remaining beef mixture.
  3. In a small bowl, whisk together the cream of mushroom soup and milk until smooth. Pour this mixture evenly over the casserole layers. Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  4. Cover the baking dish with aluminum foil and bake for 40 minutes. After 40 minutes, remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and the potatoes are tender when pierced with a fork.
  5. Once done, remove the casserole from the oven and let it sit for a few minutes before serving. Garnish with fresh parsley or chives for added flavor and color.

Notes

Slice the potatoes thinly for even cooking. You can add other vegetables like bell peppers or mushrooms for extra flavor.
