- 4 medium zucchinis
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese

Instructions
- Preheat your oven to 400°F (200°C).
- Slice the zucchinis into thick steaks, about 1 inch in thickness.
- Season the zucchini steaks with salt, pepper, and minced garlic.
- Place the zucchini on a baking sheet lined with parchment paper.
- Top each zucchini steak with mozzarella and Parmesan cheese.
- Bake for 20 minutes or until tender and the cheese is melted.
- For extra crispiness, broil for the last 2-3 minutes.
- Garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for about 10 minutes.
