- 4 chicken breasts, no bones, no skin
- 1 cup mushrooms, chopped super small
- 1/2 cup softened cream cheese
- 1/4 cup Parmesan, grated
- 1/2 cup mozzarella cheese, shredded
- Salt and pepper, to taste
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- 3 garlic cloves, minced
- 3 tablespoons butter
- A handful of fresh chopped parsley for topping
Instructions
- Preheat your oven to 375°F. Prepare a baking tray with oil spray or parchment paper.
- Make a deep pocket in each chicken breast without cutting all the way through.
- In a bowl, mix together mushrooms, cream cheese, mozzarella, garlic, thyme, parsley, salt, and pepper.
- Stuff the mushroom and cheese mixture evenly inside each chicken breast.
- Cook the stuffed chicken breasts in a skillet with melted butter until golden on both sides, about a few minutes per side.
- Transfer the chicken to the baking tray, sprinkle with Parmesan, and bake for 20-25 minutes until the internal temperature reaches 165°F and the cheese is melted.
- Top with fresh parsley before serving.
Notes
Do not overstuff the chicken to prevent spillage during cooking. Adjust garlic to taste and consider using fresh herbs for enhanced flavor.
