Ingredients

  • 4 chicken breasts, no bones, no skin
  • 1 cup mushrooms, chopped super small
  • 1/2 cup softened cream cheese
  • 1/4 cup Parmesan, grated
  • 1/2 cup mozzarella cheese, shredded
  • Salt and pepper, to taste
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 3 garlic cloves, minced
  • 3 tablespoons butter
  • A handful of fresh chopped parsley for topping

Instructions

  1. Preheat your oven to 375°F. Prepare a baking tray with oil spray or parchment paper.
  2. Make a deep pocket in each chicken breast without cutting all the way through.
  3. In a bowl, mix together mushrooms, cream cheese, mozzarella, garlic, thyme, parsley, salt, and pepper.
  4. Stuff the mushroom and cheese mixture evenly inside each chicken breast.
  5. Cook the stuffed chicken breasts in a skillet with melted butter until golden on both sides, about a few minutes per side.
  6. Transfer the chicken to the baking tray, sprinkle with Parmesan, and bake for 20-25 minutes until the internal temperature reaches 165°F and the cheese is melted.
  7. Top with fresh parsley before serving.

Notes

Do not overstuff the chicken to prevent spillage during cooking. Adjust garlic to taste and consider using fresh herbs for enhanced flavor.
