- 1 lb ground beef
- 2 medium potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 6 large tortillas
- Salt and pepper to taste
- Optional toppings: sour cream, salsa, guacamole
Instructions
- In a large skillet, brown the ground beef with the diced onions and minced garlic over medium heat until fully cooked.
- Boil the diced potatoes in salted water until fork-tender, then drain and mix with the beef.
- Add cheese to the beef and potato mixture, stirring until melted and well combined.
- Warm the tortillas in a skillet or microwave until pliable.
- Spoon the filling into each tortilla and roll them up tightly.
- Serve warm with your favorite toppings.
