A hearty and fun dish combining classic cheeseburger flavors with the comfort of a casserole, topped with crispy bacon.

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 packet ranch seasoning mix
  • 1 can (10.5 oz) cheddar cheese soup
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 bag (32 oz) frozen tater tots
  • 6 strips cooked bacon, crumbled
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook your ground beef until browned, breaking it apart as it cooks.
  3. Add the diced onion and cook for another 3-4 minutes until softened.
  4. Season with salt, pepper, and ranch seasoning.
  5. In a separate bowl, combine the cheddar cheese soup with a little water to loosen it up, then stir in half of the shredded cheddar and mozzarella cheese.
  6. Spread the cooked beef mixture evenly in a 9×13-inch casserole dish.
  7. Layer the tater tots on top of the beef.
  8. Pour the cheesy soup mixture over the tater tots, then top with the remaining cheddar and mozzarella cheeses.
  9. Bake for 25-30 minutes until the tater tots are crispy and the cheese is bubbling and golden.
  10. Sprinkle with crumbled bacon and serve hot.

Notes

Feel free to substitute ground beef with ground turkey or chicken for a lighter version, or make a vegetarian version with black beans or lentils.
