Ingredients

  • 1 package tortellini
  • 1 pound steak (thinly sliced)
  • 1 cup provolone cheese (shredded)
  • 1 onion (sliced)
  • 1 green bell pepper (sliced)
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced onion and bell pepper, cooking until soft.
  3. Add steak to the skillet and cook until browned. Season with salt and pepper.
  4. Pour in beef broth and bring to a simmer. Stir in the cooked tortellini.
  5. Sprinkle provolone cheese over the top, cover, and cook until the cheese is melted. Serve hot.

Notes

For a lighter version, substitute steak with grilled chicken or beans. Add other vegetables for more color.
