Description

A quick, yeast-free loaf of cheddar herb soda bread that’s perfect for weeknight dinners or weekend baking.


Ingredients

Scale
  • 3 cups (360 g) all-purpose flour
  • 1 tsp baking soda
  • 1½ tsp salt
  • 1 tbsp sugar
  • 2 tbsp cold unsalted butter
  • 1 cup (110 g) shredded sharp cheddar
  • 2 tbsp chopped fresh herbs (parsley, chives, or thyme)
  • 1½ cups (360 ml) cold buttermilk

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, whisk together flour, baking soda, salt, and sugar.
  3. Cut in the cold unsalted butter until the mixture resembles coarse crumbs.
  4. Stir in the shredded sharp cheddar and chopped herbs.
  5. Make a well in the dry ingredients and pour in the cold buttermilk; fold gently until just combined.
  6. Shape the mixture into a round loaf on a floured surface and score the top.
  7. Transfer to a baking sheet or a preheated cast-iron skillet.
  8. Bake for 30–35 minutes until the loaf is golden and sounds hollow when tapped.

Notes

Serve warm brushed with melted butter and sprinkled with fresh herbs.
