- 2 chayotes, peeled, cored, and sliced
- 2 dried green chiles, rehydrated and chopped
- 1 medium onion, sliced
- 2 tablespoons olive oil

Instructions
- Heat olive oil in a nonstick skillet over medium heat.
- Add sliced onions and cook until translucent.
- Add sliced chayote and chopped dried green chiles to the skillet.
- Sauté until chayote is just tender, about 5-7 minutes.
- Season with salt and pepper, stir in fresh herbs if using, and serve warm.
