- 1.5–2 lb (700–900 g) bone-in, skin-on chicken thighs
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 2 large sweet potatoes, peeled and cut into 3/4-inch cubes
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 peeled, thickly sliced oranges
Instructions
- Pat chicken thighs dry and season with salt, black pepper, and smoked paprika.
- Toss sweet potatoes with olive oil, salt, and pepper, then spread on a baking sheet.
- Heat a skillet over medium-high heat and sear the chicken skin-side down for 4–6 minutes until deep golden.
- Add sweet potatoes and orange slices to the pan.
- Roast at 425°F (220°C) for 20–25 minutes until chicken reaches 165°F (74°C) and potatoes are tender.
- Let rest for 5–10 minutes before serving, spooning pan juices over the chicken.
Notes
For best results, dry the chicken skin thoroughly and season in advance. Adjust roasting time based on chicken type.
