- 1 lb (about 450 g) carrots
- 2 tbsp olive oil
- 1 tsp fine sea salt
- 1 tsp granulated sugar (optional)
- 1 cup (8 oz) whole-milk ricotta
- 1 tbsp extra-virgin olive oil
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1/4 tsp salt
- 3 tbsp honey
- 1/2 tsp red pepper flakes
- Flaky sea salt for garnish
Instructions
- Preheat oven to 425°F (220°C).
- Trim and cut carrots into uniform sticks.
- Toss carrots with olive oil, sea salt, and sugar if using.
- Roast on a rimmed baking sheet for 20–25 minutes until golden and charred.
- Meanwhile, blend ricotta, extra-virgin olive oil, lemon zest, lemon juice, and salt in a food processor until smooth.
- Warm honey with red pepper flakes in a small saucepan over low heat for 2–3 minutes.
- Plate roasted carrots over whipped ricotta, drizzle with hot honey, and sprinkle with flaky sea salt.
Notes
For a dairy-free option, use whipped silken tofu or cashew cream. Store components separately for optimal texture.
