- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk or yogurt
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 large egg (for cream cheese swirl)
- 1 tablespoon cornstarch (optional)
- 1/2 cup caramel sauce
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
- Add eggs and milk or yogurt, mix until combined.
- In a separate bowl, whisk together the dry ingredients: flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet until just combined, being careful not to overmix.
- In another bowl, beat together cream cheese, powdered sugar, and one egg until smooth. If desired, fold in cornstarch.
- Drop batter evenly into muffin cups, then add spoonfuls of cream cheese filling and warm caramel on top.
- Using a toothpick, carefully swirl the cream cheese and caramel into the batter.
- Bake for 18–22 minutes, or until a toothpick inserted in the muffin portion comes out with a few moist crumbs.
- Let cool for a few minutes before serving warm.
Notes
Chill the cream cheese filling before swirling to maintain its shape. Serve slightly warm for the best texture.
