Description

A magnificent dessert that combines creamy cheesecake and spiced apple crisp, topped with a crunchy streusel.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 4 cups sliced apples (Granny Smith and Honeycrisp)
  • 1 teaspoon ground cinnamon
  • ½ cup brown sugar
  • 1 cup rolled oats
  • ½ cup all-purpose flour
  • ½ cup cold unsalted butter, cubed
  • Caramel sauce for drizzling

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat together cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour the cheesecake filling over the crust and smooth the top.
  6. In a skillet, sauté apples with cinnamon and brown sugar until tender.
  7. Spread the apple mixture over the cheesecake.
  8. In a separate bowl, combine oats, flour, and cold butter, mixing until crumbly to make the streusel topping.
  9. Sprinkle the streusel over the apples.
  10. Bake in a water bath for 60 minutes, until the center is set.
  11. Let the cheesecake cool in the oven with the door slightly ajar for 1 hour, then chill in the refrigerator for at least 4 hours before serving.
  12. Drizzle with caramel sauce before serving.
