- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 4 (8 oz) packages cream cheese, at room temperature
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 4 cups sliced apples (Granny Smith and Honeycrisp)
- 1 teaspoon ground cinnamon
- ½ cup brown sugar
- 1 cup rolled oats
- ½ cup all-purpose flour
- ½ cup cold unsalted butter, cubed
- Caramel sauce for drizzling
Instructions
- Preheat the oven to 325°F (165°C).
- In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of a springform pan to form the crust.
- In a large bowl, beat together cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Pour the cheesecake filling over the crust and smooth the top.
- In a skillet, sauté apples with cinnamon and brown sugar until tender.
- Spread the apple mixture over the cheesecake.
- In a separate bowl, combine oats, flour, and cold butter, mixing until crumbly to make the streusel topping.
- Sprinkle the streusel over the apples.
- Bake in a water bath for 60 minutes, until the center is set.
- Let the cheesecake cool in the oven with the door slightly ajar for 1 hour, then chill in the refrigerator for at least 4 hours before serving.
- Drizzle with caramel sauce before serving.
