Description

A bright, comforting dish that layers seared chicken with juicy tomatoes, fresh basil, and gooey mozzarella for a quick weeknight meal.


Ingredients

  • 4 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 12 tablespoons flour
  • 12 tablespoons olive oil
  • 23 slices fresh tomato
  • 12 slices fresh mozzarella (about 2 oz)
  • Fresh basil, torn
  • Balsamic vinegar, optional

Instructions

  1. Pound the chicken breasts to an even 1/2-inch thickness, season with salt and pepper, and dredge lightly in flour.
  2. Heat olive oil in a cast-iron skillet over medium-high heat.
  3. Sear the chicken for 4–5 minutes per side until golden.
  4. Transfer the skillet to a preheated 400°F oven for 8–10 minutes, or until the internal temperature reaches 160–162°F.
  5. Top each breast with fresh tomato slices, mozzarella, and a drizzle of olive oil.
  6. Broil for 1–2 minutes until the cheese is bubbly and the chicken reaches 165°F.
  7. Garnish with torn basil and a splash of balsamic if desired.

Notes

Pat tomatoes dry before adding them to prevent sogginess.
