- 1 1/4 cups (300ml) cream
- 1/2 cup (125ml) whole milk
- 1/3 cup (70g) sugar (for custard)
- 4 large egg yolks
- 1/2 vanilla bean, scraped
- 1 tablespoon sugar (for caramelizing) per serving
Instructions
- Preheat the oven to 300ºF (150ºC).
- In a saucepan, combine cream, milk, and sugar. Heat until sugar dissolves.
- In a bowl, whisk together egg yolks and vanilla bean seeds.
- Slowly add the heated cream mixture to the yolks, whisking continuously.
- Pour the custard into ramekins and place them in a baking dish filled with hot water (water bath method).
- Bake for 20 to 25 minutes or until set with a slight wobble in the center.
- Chill for at least 4 hours in the refrigerator.
- Sprinkle sugar on top and use a kitchen torch to caramelize until golden brown. Let cool before serving.
Notes
Chill the custard well after baking for the best texture. If using glass bowls, be cautious with temperature changes.
