- 1 cup low-fat graham cracker crumbs
- 3 tbsp melted coconut oil or light butter
- 1.5 cups reduced-fat cream cheese
- 1 cup Greek yogurt
- 1/2 cup sugar substitute (like erythritol or stevia)
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh strawberries, sliced
- 2 tbsp strawberry jam (optional, for a light glaze)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the graham cracker crumbs and melted coconut oil or butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the reduced-fat cream cheese, Greek yogurt, sugar substitute, eggs, and vanilla extract until smooth.
- Pour the mixture over the crust in the springform pan and smooth the top with a spatula.
- Bake for 40-45 minutes, or until the cheesecake is set but still slightly jiggly in the center.
- Let the cheesecake cool, then refrigerate for at least 4 hours before serving.
- Top with sliced strawberries and a light drizzle of strawberry jam if desired.
Notes
For fewer calories, consider using fresh strawberries without added sugar on top.
