A lighter version of strawberry cheesecake made with reduced-fat ingredients for a healthier treat.

Ingredients

  • 1 cup low-fat graham cracker crumbs
  • 3 tbsp melted coconut oil or light butter
  • 1.5 cups reduced-fat cream cheese
  • 1 cup Greek yogurt
  • 1/2 cup sugar substitute (like erythritol or stevia)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, sliced
  • 2 tbsp strawberry jam (optional, for a light glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs and melted coconut oil or butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat the reduced-fat cream cheese, Greek yogurt, sugar substitute, eggs, and vanilla extract until smooth.
  4. Pour the mixture over the crust in the springform pan and smooth the top with a spatula.
  5. Bake for 40-45 minutes, or until the cheesecake is set but still slightly jiggly in the center.
  6. Let the cheesecake cool, then refrigerate for at least 4 hours before serving.
  7. Top with sliced strawberries and a light drizzle of strawberry jam if desired.

Notes

For fewer calories, consider using fresh strawberries without added sugar on top.
