- 6 large Hard Boiled Eggs
- 1/2 cup Mayonnaise
- 1 tablespoon Dill Pickle Relish
- 1 tablespoon Yellow Mustard
- 1 teaspoon Cajun Seasoning
- 1 teaspoon Hot Sauce
- 1/2 cup Flour
- 2 large Eggs, beaten
- 1 cup Panko Bread Crumbs
- 1 teaspoon Gumbo File Powder
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 tablespoon Smoked Paprika
Instructions
- Peel the hard-boiled eggs and cut each in half lengthwise; remove the yolks carefully.
- Mash the yolks in a bowl and mix in mayonnaise, dill pickle relish, yellow mustard, Cajun seasoning, and hot sauce until smooth.
- Spoon the filling back into the egg whites.
- Set up a breading station: flour in one bowl, beaten eggs in another, and panko mixed with gumbo file powder, salt, and pepper in a third bowl.
- Dip each stuffed egg in flour, followed by beaten eggs, and then coat with panko bread crumbs.
- Heat oil in a frying pan over medium heat. Once hot, carefully add the breaded eggs and fry until golden brown, about 2-3 minutes on each side.
- Remove from the pan and place on paper towels to drain excess oil.
- Sprinkle with smoked paprika before serving for added flavor.
Notes
Serve warm with your favorite dipping sauce. Store leftovers in an airtight container in the fridge for up to 2 days.
