Ingredients

  • 6 large Hard Boiled Eggs
  • 1/2 cup Mayonnaise
  • 1 tablespoon Dill Pickle Relish
  • 1 tablespoon Yellow Mustard
  • 1 teaspoon Cajun Seasoning
  • 1 teaspoon Hot Sauce
  • 1/2 cup Flour
  • 2 large Eggs, beaten
  • 1 cup Panko Bread Crumbs
  • 1 teaspoon Gumbo File Powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 tablespoon Smoked Paprika

Instructions

  1. Peel the hard-boiled eggs and cut each in half lengthwise; remove the yolks carefully.
  2. Mash the yolks in a bowl and mix in mayonnaise, dill pickle relish, yellow mustard, Cajun seasoning, and hot sauce until smooth.
  3. Spoon the filling back into the egg whites.
  4. Set up a breading station: flour in one bowl, beaten eggs in another, and panko mixed with gumbo file powder, salt, and pepper in a third bowl.
  5. Dip each stuffed egg in flour, followed by beaten eggs, and then coat with panko bread crumbs.
  6. Heat oil in a frying pan over medium heat. Once hot, carefully add the breaded eggs and fry until golden brown, about 2-3 minutes on each side.
  7. Remove from the pan and place on paper towels to drain excess oil.
  8. Sprinkle with smoked paprika before serving for added flavor.

Notes

Serve warm with your favorite dipping sauce. Store leftovers in an airtight container in the fridge for up to 2 days.
