Ingredients

- 1.5 lbs chicken, cut into pieces
- 2 tablespoons Cajun seasoning
- 3 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 8 oz mushrooms, sliced
- 2 cups red wine
- 2 cups chicken broth
- 2 tablespoons tomato paste
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Marinate the chicken in Cajun seasoning for at least 4 hours or overnight.
- In a heavy pot, heat olive oil over medium heat and sauté the chicken until golden brown. Remove and set aside.
- Add onion, garlic, carrots, celery, and mushrooms to the pot, sautéing until softened.
- Deglaze the pot with red wine, scraping up any browned bits.
- Add back the chicken, chicken broth, and tomato paste, then bring to a simmer.
- Cover and let simmer for about 1 hour, until the chicken is cooked through and tender.
- Serve over mashed potatoes or rice, garnished with fresh thyme.
Notes
For best flavor, use a good quality red wine and allow the chicken to marinate overnight if possible. A Dutch oven is recommended for even cooking.
