Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 2 tablespoons Cajun seasoning
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 8 oz mushrooms, sliced
  • 2 cups red wine
  • 2 cups chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Marinate the chicken in Cajun seasoning for at least 4 hours or overnight.
  2. In a heavy pot, heat olive oil over medium heat and sauté the chicken until golden brown. Remove and set aside.
  3. Add onion, garlic, carrots, celery, and mushrooms to the pot, sautéing until softened.
  4. Deglaze the pot with red wine, scraping up any browned bits.
  5. Add back the chicken, chicken broth, and tomato paste, then bring to a simmer.
  6. Cover and let simmer for about 1 hour, until the chicken is cooked through and tender.
  7. Serve over mashed potatoes or rice, garnished with fresh thyme.

Notes

For best flavor, use a good quality red wine and allow the chicken to marinate overnight if possible. A Dutch oven is recommended for even cooking.
