A fun twist on a classic dish, Cajun Chicken Sloppy Joes are easy to prepare and packed with flavor, making them perfect for a quick family dinner or gathering.

Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup red onion, diced
  • 10.5 ounces condensed cream of chicken soup
  • 15 ounces canned corn, drained
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 pound lean ground chicken
  • 1 cup shredded mozzarella and cheddar cheese blend
  • 4 large hamburger buns

Instructions

  1. In a large skillet, cook the ground chicken over medium heat, breaking it up as it cooks until there is no pink left.
  2. Add corn, red onion, cream of chicken soup, Cajun seasoning, onion powder, salt, and pepper. Mix until well combined.
  3. Let the mixture bubble gently for about 5-7 minutes over medium heat, stirring occasionally, until it thickens.
  4. Remove from heat and stir in the mayonnaise until smooth and creamy.
  5. If desired, toast the buns until golden brown.
  6. Spoon the hot chicken mixture onto the bottom buns and sprinkle with cheese blend.
  7. Top with the other half of the bun and serve warm.

Notes

Adjust the spiciness by using more or less Cajun seasoning. Feel free to add more veggies for extra nutrition.
