- 2 tablespoons Cajun seasoning
- 1 teaspoon salt
- 2 tablespoons olive oil, divided
- 1 sliced red bell pepper
- 1 sliced green bell pepper
- 1 small sliced red onion
- 1 tablespoon chicken stock or lemon juice
- 1 cup cooked rice or quinoa per 2 bowls
- Chopped green onions (for topping)
- Plain Greek yogurt or avocado crema (for topping)
Instructions
- Pat chicken dry and toss with Cajun seasoning, salt, and 1 tablespoon olive oil.
- Heat a cast-iron skillet over medium-high heat, add 1 tablespoon oil, and sear chicken for 4-5 minutes per side until internal temperature reaches 165°F, or finish in a 400°F oven if necessary.
- While chicken rests, sauté bell peppers and onion on high heat for 5-7 minutes until charred; deglaze with chicken stock or lemon juice.
- Slice chicken against the grain and build bowls with cooked rice or quinoa, topped with sautéed veggies, chicken, green onions, and a drizzle of yogurt or crema.
