- 1 medium butternut squash, peeled and cubed
- 3 medium apples, sliced
- 2 tablespoons olive oil

Instructions
- Preheat oven to 375°F (190°C).
- Peel and cube the butternut squash, and slice the apples.
- In a large bowl, combine the squash, apples, olive oil, brown sugar, cinnamon, nutmeg, and salt.
- Layer the mixture in a baking dish lined with parchment paper.
- Bake for about 45 minutes, until golden and tender.
- Check for doneness; squash should be easily pierced with a fork.
- Serve warm and garnish with herbs if desired.
Notes
You can prepare this dish the day before and refrigerate until ready to bake. Consider using pears instead of apples for a twist.
