Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 3 medium apples, sliced
  • 2 tablespoons olive oil
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

  • Salt to taste
  • Parchment paper (for baking dish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel and cube the butternut squash, and slice the apples.
  3. In a large bowl, combine the squash, apples, olive oil, brown sugar, cinnamon, nutmeg, and salt.
  4. Layer the mixture in a baking dish lined with parchment paper.
  5. Bake for about 45 minutes, until golden and tender.
  6. Check for doneness; squash should be easily pierced with a fork.
  7. Serve warm and garnish with herbs if desired.
