- 1 lb chicken breast, cut into bite-sized pieces
- 1/2 cup buffalo sauce
- 1 tsp garlic powder
- Salt and pepper, to taste
- 8 oz pasta (fettuccine or penne)
- 1 cup heavy cream
- 1 tbsp Cajun seasoning
- 1/2 cup ranch dressing
- 1/4 cup Parmesan cheese, grated
- 2 tbsp olive oil
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss chicken bites with olive oil, garlic powder, salt, and pepper.
- Spread chicken on a baking sheet and bake for 20-25 minutes until crispy.
- Cook pasta according to package instructions.
- In a saucepan, combine heavy cream, Cajun seasoning, and ranch dressing over medium heat, stirring until thickened.
- Add cooked pasta to the sauce and mix well.
- Toss baked chicken bites in buffalo sauce.
- Serve the buffalo chicken bites on a plate with the creamy pasta, and garnish with parsley and Parmesan cheese.
Notes
For extra flavor, marinate the chicken in buffalo sauce for a couple of hours before baking. You can also use shrimp or tofu as a protein substitute.
