Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/2 cup buffalo sauce
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 8 oz pasta (fettuccine or penne)
  • 1 cup heavy cream
  • 1 tbsp Cajun seasoning
  • 1/2 cup ranch dressing
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss chicken bites with olive oil, garlic powder, salt, and pepper.
  3. Spread chicken on a baking sheet and bake for 20-25 minutes until crispy.
  4. Cook pasta according to package instructions.
  5. In a saucepan, combine heavy cream, Cajun seasoning, and ranch dressing over medium heat, stirring until thickened.
  6. Add cooked pasta to the sauce and mix well.
  7. Toss baked chicken bites in buffalo sauce.
  8. Serve the buffalo chicken bites on a plate with the creamy pasta, and garnish with parsley and Parmesan cheese.

Notes

For extra flavor, marinate the chicken in buffalo sauce for a couple of hours before baking. You can also use shrimp or tofu as a protein substitute.
