Ingredients

- 1.5 pounds boneless skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 cup buffalo sauce
- 2 tablespoons melted butter
Instructions
- Cut chicken into 1-inch pieces.
- Season the chicken as desired.
- Dredge in flour, dip in beaten eggs, and coat in panko mixed with garlic powder and paprika.
- Arrange on a wire rack over a baking sheet.
- Bake at 425°F for 12–15 minutes, turning once.
- Toss with buffalo sauce mixed with melted butter.
- Return to oven for an additional 2–3 minutes to set the sauce.
Notes
For extra-crispy bites, double-coat and lightly spray with oil before baking. Store leftovers in an airtight container for 3–4 days.
