Description

A delightful twist on a classic dish with juicy chicken breasts topped with fresh tomato and basil.

Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 2 cups chopped fresh tomatoes
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Balsamic glaze, for drizzling (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper.
  3. In a hot, oven-safe skillet, sear the chicken briefly until golden brown.
  4. In a bowl, combine chopped tomatoes, garlic, basil, olive oil, and balsamic vinegar to create the bruschetta topping.
  5. Pour the bruschetta mixture over the seared chicken.
  6. Bake in the preheated oven until the chicken is cooked through and the topping is bubbly, about 30 minutes.
  7. Garnish with additional basil and drizzle with balsamic glaze before serving.

Notes

Serve with garlic bread or a light salad for a complete meal. Use fresh ingredients for the best flavor.
