Description

A delicious baked chicken dish topped with a classic bruschetta mixture of fresh tomatoes, basil, and mozzarella, perfect for any occasion.


Ingredients

  • 4 chicken breasts
  • 2 cups diced fresh tomatoes
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper, then place in a baking dish.
  3. Bake chicken for 25 minutes or until just cooked through.
  4. While the chicken is baking, combine diced tomatoes, garlic, basil, olive oil, and balsamic vinegar in a bowl to make the bruschetta mixture.
  5. Once the chicken is nearly ready, spoon the bruschetta mixture over the chicken, then top with mozzarella cheese.
  6. Bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  7. Serve warm, garnished with extra basil or a drizzle of balsamic reduction.
