- 4 chicken breasts
- 2 cups diced fresh tomatoes
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 cup mozzarella cheese, shredded
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season chicken breasts with salt and pepper, then place in a baking dish.
- Bake chicken for 25 minutes or until just cooked through.
- While the chicken is baking, combine diced tomatoes, garlic, basil, olive oil, and balsamic vinegar in a bowl to make the bruschetta mixture.
- Once the chicken is nearly ready, spoon the bruschetta mixture over the chicken, then top with mozzarella cheese.
- Bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Serve warm, garnished with extra basil or a drizzle of balsamic reduction.
