- 2 to 3 fresh peaches, washed, peeled, and sliced
- 1 cup packed brown sugar
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1/2 cup milk or buttermilk, at room temperature
Instructions
- Wash, peel, and slice the fresh peaches.
- Preheat the oven to 350°F (175°C) and grease your baking pan.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- Using a mixer, beat the softened butter with brown sugar until light and fluffy.
- Add the eggs to the butter mixture one at a time, then add vanilla extract.
- Alternate adding the dry mixture and milk to the butter mixture, mixing until just combined.
- Gently fold in the peach slices.
- Pour the batter into the prepared pan and bake for 45 to 50 minutes, until a toothpick comes out clean.
- Allow the cake to cool in the pan for at least 20 minutes before slicing.
Notes
Serve warm or at room temperature, optionally topped with vanilla ice cream or whipped cream.
