Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh broccoli, steamed and chopped
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the steamed broccoli, cream cheese, cheddar cheese, salt, and pepper.
  3. Cut pockets in the chicken breasts and stuff them generously with the filling.
  4. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden on both sides.
  5. Transfer the chicken to a baking dish and bake for 25 minutes, or until the chicken is cooked through (internal temperature of 165°F).
