- 4 boneless, skinless chicken breasts
- 2 cups fresh broccoli, steamed and chopped
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the steamed broccoli, cream cheese, cheddar cheese, salt, and pepper.
- Cut pockets in the chicken breasts and stuff them generously with the filling.
- Heat olive oil in a skillet over medium-high heat and sear the chicken until golden on both sides.
- Transfer the chicken to a baking dish and bake for 25 minutes, or until the chicken is cooked through (internal temperature of 165°F).
- Let the chicken rest for a few minutes before serving.
